Description

This Old Fashioned Rice Pudding is a creamy, comforting dessert made with simple pantry staples like milk, eggs, rice, and vanilla. Perfect for cozy nights or chilled as a refreshing treat, this traditional rice pudding recipe delivers nostalgic flavor and silky texture. Ideal for meal prep, holidays, or anytime you crave a classic sweet.


Ingredients

3/4 cup medium-grain white rice

2 cups water

4 cups whole milk

1/3 cup granulated sugar

1/4 teaspoon salt

2 large eggs

1 1/2 teaspoons vanilla extract

1/2 teaspoon ground cinnamon

1/2 cup raisins (optional)


Instructions

1. In a large saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low and simmer until rice is tender and water is mostly absorbed, about 15 minutes.

2. Stir in the milk and cook over low heat, stirring occasionally, until the mixture starts to thicken and rice is very soft, about 20 minutes.

3. In a separate bowl, whisk the eggs with sugar. Slowly add a bit of the hot rice mixture to the eggs to temper, then return the mixture to the saucepan.

4. Cook over low heat while stirring constantly until the pudding thickens and becomes creamy, around 5–7 minutes.

5. Remove from heat. Stir in vanilla extract, ground cinnamon, and raisins if using.

6. Let pudding cool slightly before serving warm, or refrigerate for a chilled dessert. Stir in a splash of milk if it thickens too much after cooling.

Notes

This pudding thickens as it cools, so don’t overcook.

You can adjust the sweetness by adding more or less sugar to taste.

Raisins are traditional, but feel free to leave them out or replace with dried cranberries or chopped dates.
