Description

These no bake vegan date brownies are a wholesome chocolate dessert made with Medjool dates, walnuts, and cocoa. Gluten-free, dairy-free, and refined sugar-free, they’re perfect for plant-based snacking or healthy meal prep treats.


Ingredients

2 cups Medjool dates

1 cup walnuts

1/3 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1/4 teaspoon sea salt

2 tablespoons water (as needed)


Instructions

1. Pit the Medjool dates and soak them in warm water for 10 minutes if they are dry.

2. In a food processor, blend the walnuts and cocoa powder until finely ground.

3. Add the dates, vanilla extract, and sea salt to the mixture and blend again until a sticky dough forms.

4. If the dough is too dry, add water one tablespoon at a time and pulse to combine.

5. Press the dough firmly into a parchment-lined dish to create an even layer.

6. Chill in the refrigerator for at least 1 hour to firm up.

7. Slice into squares or bars and store in an airtight container.

Notes

Soak dates only if they’re dry; soft ones blend easily.

Use almonds or pecans as walnut substitutes if preferred.

These brownies are freezer-friendly for longer storage.
