This Next-Level Teriyaki Chicken Stir-Fry with Rainbow Veggies & Wild Rice is a flavor-packed dinner loaded with juicy chicken, crisp vegetables, wild rice, and a homemade teriyaki glaze. A healthy stir-fry recipe perfect for busy weeknights, bursting with color and Asian-inspired flavor.
Ingredients
1 lb chicken thighs
2 cups cooked wild rice
1 ½ cups broccoli florets
1 red bell pepper, sliced
1 cup thinly sliced carrots
1 cup snap peas
2 cloves garlic, minced
1 tbsp fresh ginger, grated
⅓ cup soy sauce
2 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tbsp cornstarch
1 tsp sesame oil
Instructions
1. Cook wild rice according to package directions. Set aside.
2. In a bowl, whisk soy sauce, honey or brown sugar, rice vinegar, garlic, and ginger. In another bowl, dissolve cornstarch in water and add to sauce.
3. Heat oil in a skillet over medium-high heat. Cook diced chicken thighs until golden and cooked through. Set aside.
4. In the same skillet, stir-fry broccoli, bell pepper, carrots, and snap peas for 4–5 minutes until tender-crisp.
5. Return chicken to skillet. Add teriyaki sauce and stir to coat. Simmer until sauce thickens and glazes everything.
6. Serve over wild rice and drizzle with sesame oil. Enjoy hot.
Notes
Use chicken thighs for juicier results.
Add crushed red pepper for a spicy kick.
