Ingredients
1 pound ground beef
16 ounces Velveeta cheese, cubed
10 ounces Rotel tomatoes, undrained
1 tablespoon taco seasoning
Optional: 1 can diced green chilies or 1 chopped jalapeño
Instructions
1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
2. Cube the Velveeta cheese and add it to the crockpot.
3. Add in the browned beef, Rotel tomatoes (with juice), taco seasoning, and optional chilies or jalapeños. Stir to combine.
4. Cover and cook on low for 2 hours, stirring occasionally until everything is melted and smooth.
5. Once melted, switch the crockpot to warm setting to serve. Enjoy with chips or over nachos.
Notes
This dip can be made spicier by using hot Rotel or adding extra jalapeños.
Store leftovers in the fridge for up to 3 days and reheat with a splash of milk.
For a smoother texture, stir the dip occasionally while it’s warming in the crockpot.
