A quick and delicious Mongolian Ground Beef Noodles recipe made with savory-sweet sauce, tender noodles, and garlic-ginger ground beef. Perfect for busy weeknights, this noodle dish is easy, budget-friendly, and bursting with flavor.
Ingredients
8 oz lo mein noodles
1 lb ground beef
2 tbsp vegetable oil
4 cloves garlic, minced
1 tbsp fresh ginger, minced
1/4 cup soy sauce
1/4 cup brown sugar
1 tsp sesame oil
1 tbsp cornstarch
1/4 cup water
3 green onions, chopped
1/2 tsp red pepper flakes (optional)
Instructions
1. Cook the lo mein noodles according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.
2. In a large skillet, heat vegetable oil over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks.
3. Drain excess fat if needed, then stir in garlic and ginger. Cook for 30 seconds until fragrant.
4. Add soy sauce, brown sugar, sesame oil, and the cornstarch-water mixture. Stir to combine and let simmer until thickened slightly.
5. Add the cooked noodles to the skillet. Toss everything together to coat well. Add pasta water if needed to thin the sauce.
6. Garnish with chopped green onions and red pepper flakes if using. Serve hot.
Notes
Use ground turkey or chicken as a leaner protein alternative.
Add stir-fried vegetables like bell peppers or snap peas for more nutrition.
Double the sauce ingredients if you prefer it extra saucy.
