These Moist Greek Yogurt Pumpkin Bars are a soft, spiced fall treat made with pumpkin puree and creamy Greek yogurt. Perfect for breakfast, dessert, or snacks, these healthy pumpkin bars are light, protein-rich, and full of autumn flavor.
Ingredients
1 cup pumpkin puree
3/4 cup Greek yogurt
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, whisk together pumpkin puree, Greek yogurt, brown sugar, eggs, and vanilla until smooth.
3. Add flour, baking powder, cinnamon, nutmeg, and salt to the wet mixture. Stir gently until just combined.
4. Pour the batter into the prepared pan and smooth the top.
5. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
6. Let the bars cool completely in the pan before slicing.
7. Optional: Top with cream cheese frosting or a dusting of powdered sugar before serving.
Notes
These bars are very soft—don’t overmix the batter.
You can freeze leftovers between parchment for up to 2 months.
Full-fat Greek yogurt gives the best texture and flavor.
