Description

Ingredients

3 ripe bananas

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup brown sugar

2 large eggs

1/2 cup melted butter

1 teaspoon vanilla extract

1/2 cup Greek yogurt or sour cream


Instructions

1. Preheat the oven to 350°F and grease a 9×5 inch loaf pan.

2. In a large bowl, mash the ripe bananas until smooth.

3. Add melted butter, brown sugar, eggs, yogurt (or sour cream), and vanilla extract. Whisk until well combined.

4. In a separate bowl, whisk together flour, baking soda, and salt.

5. Gently fold the dry ingredients into the wet mixture. Do not overmix.

6. Pour the batter into the loaf pan and smooth the top.

7. Bake for 50–60 minutes or until a toothpick comes out clean or with a few moist crumbs.

8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best flavor and moisture.

Do not overmix the batter to keep the bread soft and tender.
