Description
Mint Oreo Truffles are an easy no bake dessert made with Mint Oreo cookies, cream cheese, and chocolate for a rich, creamy, chocolate mint treat that is perfect for holidays, parties, cookie trays, and make ahead dessert platters.
Ingredients
36 Mint Oreo cookies
8 ounces cream cheese, softened
12 ounces semi sweet chocolate chips or melting wafers
1 tablespoon coconut oil or shortening
2 tablespoons crushed Mint Oreo cookies for topping
1 tablespoon green sprinkles
1/8 teaspoon peppermint extract, optional
Instructions
1. Crush the Mint Oreo cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin.
2. Mix the cookie crumbs with the softened cream cheese until the mixture is smooth and fully combined. Stir in the peppermint extract if using.
3. Scoop and roll the mixture into 24 even balls, then place them on a parchment lined tray.
4. Chill the truffle balls in the refrigerator for 30 minutes until firm.
5. Melt the chocolate with the coconut oil or shortening, stirring until smooth and glossy.
6. Dip each chilled truffle into the melted chocolate, letting the excess drip off before returning it to the tray.
7. Top with crushed Mint Oreo cookies or green sprinkles before the coating sets.
8. Chill again until the chocolate is firm, then serve or store.
Notes
Use full fat block cream cheese for the smoothest texture and the best structure.
If the filling gets too soft while rolling, chill it for 10 to 15 minutes and continue.
A small amount of peppermint extract goes a long way, so do not add too much.
