Description

Mini peach cobbler recipe made with fresh or canned peaches, buttery batter, and warm cinnamon spice. These individual peach desserts are easy to bake, perfect for parties or weeknight treats. Serve warm with vanilla ice cream or whipped cream.


Ingredients

1 cup sliced peaches

1 cup all-purpose flour

3/4 cup granulated sugar

1/4 cup brown sugar

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup milk

1/4 cup unsalted butter

1/2 teaspoon cinnamon

1 teaspoon vanilla extract


Instructions

1. Peel and slice fresh peaches or drain canned/frozen peaches. Toss them lightly with brown sugar and cinnamon.

2. In a bowl, mix flour, granulated sugar, baking powder, and salt. Stir in milk and vanilla extract until smooth.

3. Divide butter evenly into ramekins or muffin cups. Melt in preheating oven.

4. Spoon batter over melted butter, then top with peach mixture.

5. Bake at 350°F (175°C) for 25 to 30 minutes until golden and bubbly. Let cool slightly before serving.

Notes

Use ripe fresh peaches for peak flavor.

Do not stir the batter once it’s in the ramekins.

Serve with vanilla ice cream for a classic touch.
