Description

This Mediterranean Shrimp and Avocado Salad is a refreshing, protein-packed dish with juicy shrimp, creamy avocado, and zesty lemon dressing. Perfect for a light lunch or flavorful dinner with Mediterranean flair. Ideal for clean eating, gluten-free, and low-carb diets.

Ingredients

200g shrimp

1 avocado

1 cucumber

1 cup cherry tomatoes

1/4 red onion

2 tablespoons fresh parsley

2 tablespoons lemon juice

1 garlic clove

2 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Season shrimp with salt, pepper, and garlic.

2. Heat olive oil in a skillet and cook shrimp 2-3 minutes per side until pink.

3. Dice avocado, slice cucumber, halve cherry tomatoes, and slice red onion.

4. In a bowl, whisk lemon juice, minced garlic, olive oil, salt, and pepper.

5. Combine shrimp, vegetables, and parsley in a bowl.

6. Pour dressing over the mixture and gently toss.

7. Chill for 5-10 minutes or serve immediately.

Notes

Use freshly squeezed lemon juice for best flavor.

Let shrimp cool before mixing to avoid wilting the vegetables.

Handle avocado gently to keep chunks intact.
