Description
This Mediterranean Ground Beef Stir-Fry is a one-skillet dinner packed with bold spices, lean ground beef, and fresh veggies. Perfect for busy nights, it’s quick, healthy, and full of Mediterranean flavor. Great served with rice, pita, or on its own.
Ingredients
1 lb ground beef
1 red onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped
1 cup cherry tomatoes, halved
2 cups fresh spinach
2 tbsp olive oil
1 tsp paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped red onion and sauté for 3-4 minutes.
2. Add minced garlic and cook for another minute until fragrant.
3. Add ground beef and cook until browned. Break it up with a spoon and drain excess fat if needed.
4. Add chopped bell pepper and cherry tomatoes. Season with paprika, cumin, oregano, salt, and pepper. Cook for 5-7 minutes.
5. Stir in spinach and cook until wilted.
6. Drizzle lemon juice over the mixture and toss to combine.
7. Sprinkle with fresh parsley before serving.
Notes
This recipe is naturally gluten-free.
To make it low-carb, serve with cauliflower rice.
You can add crumbled feta or olives for extra Mediterranean flavor.
