Description

This Mediterranean Carrot Salad recipe is a refreshing and healthy side dish featuring shredded carrots, olive oil, lemon juice, herbs, and spices. Perfect for meal prep, potlucks, or a vibrant lunch option. It’s gluten-free, vegetarian, and easy to customize with feta or nuts.


Ingredients

4 cups grated carrots

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

1 clove garlic, minced

1 teaspoon ground cumin

1/2 teaspoon paprika

1/2 teaspoon salt

2 tablespoons chopped fresh parsley

1/4 cup crumbled feta or toasted nuts (optional)


Instructions

1. Peel and grate the carrots using a box grater or food processor until you have about 4 cups.

2. In a small bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, and salt.

3. Place grated carrots in a large bowl and pour the dressing over them. Toss well to coat.

4. Let the salad sit for 10 minutes to absorb flavors.

5. Fold in chopped parsley just before serving.

6. Top with crumbled feta or toasted nuts if using, and serve chilled or at room temperature.

Notes

This salad tastes better after sitting for 30 minutes.

You can make it vegan by omitting the feta.
