Description

Ingredients

0.75 cup granulated sugar

3 egg whites

0.25 teaspoon cream of tartar

1 teaspoon vanilla extract

3 tablespoons water


Instructions

1. Combine the granulated sugar, egg whites, cream of tartar, and water in a heatproof bowl.

2. Set the bowl over a pot of simmering water, making sure it doesn’t touch the water. Whisk constantly until the sugar dissolves and the mixture is warm to the touch.

3. Transfer the mixture to a stand mixer or use a hand mixer. Beat on high speed for 5–7 minutes until stiff, glossy peaks form.

4. Add the vanilla extract and beat for another minute.

5. Use immediately to frost cakes or cupcakes. For a toasted effect, use a kitchen torch to lightly brown the top just before serving.

Notes

Use the frosting immediately for the best texture and shine.

If you’re toasting it, do so just before serving for the freshest look.
