Description

Ingredients

2 boneless skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

3 cloves garlic, minced

1⁄2 cup sun-dried tomatoes, chopped

2 cups chicken broth

1 cup heavy cream

1⁄2 cup grated parmesan cheese

1 cup orzo pasta

2 tablespoons fresh basil, chopped


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through. Remove from pan.

3. In the same skillet, add garlic and sauté until fragrant.

4. Add sun-dried tomatoes and cook for 2-3 minutes to release flavor.

5. Pour in chicken broth and bring to a gentle simmer.

6. Stir in heavy cream and parmesan cheese until sauce becomes creamy.

7. Add orzo and cook, stirring occasionally, for about 10-12 minutes or until tender.

8. Return chicken to skillet, spoon sauce over the top, and simmer for 2-3 more minutes.

9. Garnish with fresh basil and serve warm.

Notes

Let the orzo sit for 2-3 minutes off heat before serving to thicken.

Use low-sodium chicken broth to control saltiness.
