Description

This Lyonnaise Potatoes recipe is a French-inspired side dish featuring golden pan-fried Yukon Gold potatoes with caramelized onions and herbs. Perfect for breakfast, brunch, or dinner, this comforting dish pairs beautifully with roast meats, eggs, or fish.


Ingredients

3 large Yukon Gold potatoes

2 medium yellow onions

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Slice the Yukon Gold potatoes into 1/4-inch rounds and parboil in salted water for 5 to 7 minutes until just tender. Drain and let steam dry.

2. In a large skillet, melt butter and olive oil over medium heat. Add sliced onions and sauté until golden and soft, about 10 minutes. Set aside.

3. Add more butter and oil if needed to the skillet, then lay potato slices in a single layer. Cook until bottoms are golden, flip, and repeat for a crispy finish.

4. Return the onions to the pan and gently mix with the potatoes. Season with salt, black pepper, and fresh parsley. Toss gently before serving.

Notes

Use Yukon Gold potatoes for the best texture.

Make sure the potatoes are dry before frying to help them crisp.
