Description

This Low Carb Chicken Casserole is a creamy, cheesy, and comforting dish perfect for keto or low-carb diets. Loaded with chicken, cheese, and optional veggies like broccoli or cauliflower, it’s an easy dinner idea that’s gluten-free, meal-prep friendly, and family-approved.


Ingredients

2 cups cooked chicken, shredded or cubed

4 oz cream cheese, softened

1/2 cup sour cream

1 cup shredded cheddar cheese, divided

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp salt

1/4 tsp black pepper

1 cup steamed broccoli or cauliflower (optional)


Instructions

1. Preheat your oven to 375°F and lightly grease a casserole dish.

2. In a large mixing bowl, combine cooked chicken, cream cheese, sour cream, garlic powder, onion powder, salt, pepper, and half of the cheddar cheese. Mix until creamy and well combined.

3. If using broccoli or cauliflower, fold it into the mixture.

4. Transfer everything to the casserole dish and spread it out evenly. Top with the remaining cheddar cheese.

5. Bake for 20–25 minutes until bubbly and golden on top.

6. Let it rest for a few minutes before serving.
