Description

Lobster rolls butter mayo recipe is a fresh, flavorful summer classic with buttery toasted buns, tender lobster, and creamy mayo dressing. Perfect for a seaside-inspired meal.


Ingredients

2 cups lobster meat

3 tablespoons mayonnaise

1 tablespoon lemon juice

1 tablespoon chopped chives

1/4 teaspoon salt

1/4 teaspoon pepper

4 hot dog buns or split-top rolls

3 tablespoons unsalted butter


Instructions

1. Roughly chop the lobster meat into bite-sized chunks. Place it in a bowl and set aside while you prepare the dressing.

2. In a small bowl, stir together the mayonnaise, a squeeze of fresh lemon juice, finely chopped chives, salt, and pepper. Taste and adjust seasoning if needed.

3. Heat a skillet over medium heat. Spread softened butter on the inside of each bun and toast until golden brown and slightly crisp.

4. Gently fold the lobster meat into the mayonnaise mixture, taking care not to break up the chunks too much.

5. Pile the dressed lobster into the warm toasted buns and serve immediately.

Notes

Use big chunks of lobster for the best texture.

Toast the buns right before serving so they stay warm.

Adjust lemon juice to taste for extra brightness.
