Ingredients
120g cooked lobster meat
2 tbsp mayonnaise
1 tsp lemon juice
1 tbsp chopped fresh chives
60g Gruyère cheese, shredded
60g white cheddar cheese, shredded
4 slices sourdough bread
2 tbsp butter
Instructions
1. In a small bowl, combine lobster meat, mayonnaise, lemon juice, and chives until evenly coated. Set aside.
2. Spread butter on one side of each slice of sourdough bread.
3. On the unbuttered side of two slices, layer Gruyère cheese, lobster mixture, and then white cheddar cheese.
4. Top with the remaining bread slices, buttered side facing out.
5. Heat a skillet over medium heat and grill sandwiches for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
6. Let rest 1 minute off heat, then slice and serve hot.
Notes
Use claw and knuckle lobster meat for the best texture.
Add a pinch of cayenne or hot sauce if you like a little heat.
Fresh chives add brightness, but you can substitute green onions.
