Ingredients
1 ½ pounds ground beef
1 cup breadcrumbs
2 large eggs
½ cup finely chopped onion
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 ½ cups mashed potatoes (prepared)
1 ½ cups shredded cheddar cheese
2 tablespoons chopped chives or green onions
Instructions
1. Preheat oven to 375°F.
2. In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic powder, salt, and pepper until just combined.
3. Shape into a loaf and place in a greased loaf pan or baking sheet.
4. Bake for 30-35 minutes or until mostly cooked through.
5. While baking, prepare or warm mashed potatoes.
6. Remove meatloaf and spread mashed potatoes over the top.
7. Sprinkle with cheddar cheese.
8. Return to oven for 15-20 minutes until cheese is melted and bubbly.
9. Let rest for 5-10 minutes before slicing.
10. Garnish with chives or green onions before serving.
Notes
Use fresh mashed potatoes for the best creamy texture.
Don’t overmix the meatloaf mixture to keep it tender.
