Ingredients
1 pound ground beef
1 small yellow onion, chopped
2 cloves garlic, minced
2 tablespoons taco seasoning
2 tablespoons tomato paste
1/2 cup water or beef broth
8 flour tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
3 tablespoons butter
3 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a skillet over medium heat, cook ground beef until browned.
2. Add chopped onion and minced garlic, cooking until soft.
3. Stir in taco seasoning, tomato paste, and water or broth. Simmer for 5-7 minutes until thickened.
4. In a saucepan, melt butter and whisk in flour to form a roux.
5. Gradually whisk in milk, stirring constantly until smooth.
6. Add cheddar and Monterey Jack cheese; stir until melted. Season with salt and pepper.
7. Fill each flour tortilla with beef mixture and roll up tightly.
8. Arrange tortillas seam-side down in a greased baking dish.
9. Pour cheese sauce evenly over enchiladas and top with extra shredded cheese.
10. Bake at 375°F for 20-25 minutes until bubbly and golden.
Notes
Use freshly shredded cheese for the best melting texture.
