Ingredients
1 pound flank steak
1/4 cup fresh lime juice
1/4 cup chopped cilantro
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili flakes (optional)
8 corn or flour tortillas
1 avocado, sliced
1/4 cup queso fresco, crumbled
1/4 cup red onion, thinly sliced
1/2 cup shredded cabbage
1/4 cup sour cream or crema
Instructions
1. In a bowl, mix lime juice, cilantro, garlic, olive oil, salt, pepper, and chili flakes.
2. Place flank steak in a resealable bag, pour in the marinade, and refrigerate for 30 minutes to 2 hours.
3. Heat a grill or skillet over high heat. Remove steak from marinade, letting excess drip off.
4. Cook steak for 3-4 minutes per side. Rest for 5-10 minutes. Slice thinly against the grain.
5. Warm tortillas using a skillet, oven, or gas flame until soft and slightly charred.
6. Assemble tacos with steak and toppings: avocado, queso fresco, onion, cabbage, and sour cream.
7. Finish with a fresh lime squeeze and serve immediately.
Notes
Marinate for at least 30 minutes for best flavor.
