Description

This Lemon Pepper Chicken Bites & Roasted Red Pepper Cajun Alfredo Twists recipe combines crispy, zesty chicken with creamy Cajun pasta for a bold, satisfying dinner. Ingredients

1 lb chicken breast

1 tbsp lemon pepper seasoning

1 cup all-purpose flour

1/2 cup cornstarch

2 eggs

10 oz pasta twists (rotini or fusilli)

1 1/2 cups heavy cream

1 cup grated parmesan cheese

3 garlic cloves

1 cup roasted red peppers

1 tbsp Cajun seasoning

2 tbsp olive oil

2 tbsp butter

1/2 tsp salt

1/2 tsp black pepper

1 tbsp chopped parsley (for garnish)


Instructions

1. Cube the chicken breast into bite-sized pieces. Whisk eggs in one bowl and combine flour, cornstarch, and lemon pepper seasoning in another. Coat chicken in egg, then dredge in flour mixture.

2. Heat olive oil and a bit of butter in a skillet. Fry chicken in batches until golden and crispy. Set aside on paper towels.

3. Cook the pasta according to package directions until al dente. Drain and set aside.

4. In the skillet, melt butter and sauté minced garlic. Blend roasted red peppers with some cream and add to skillet with remaining cream and Cajun seasoning. Simmer gently.

5. Stir in parmesan cheese until sauce thickens. Toss in the cooked pasta and coat evenly.

6. Plate the pasta and top with crispy chicken bites. Garnish with parsley and adjust salt and pepper as needed.

Notes

Use freshly grated parmesan for best texture and flavor.

Keep pasta and chicken separate when storing to maintain crispiness.
