Ingredients

2 chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

3 garlic cloves, minced

3 tablespoons butter

1 tablespoon olive oil

2 tablespoons fresh lemon juice

8 ounces linguine pasta

1/2 cup grated parmesan cheese

2 tablespoons chopped parsley (optional)


Instructions

1. Cut the chicken breast into bite-sized chunks and season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken bites and sear until golden brown and cooked through, about 5 to 6 minutes. Remove from skillet and set aside.

3. In the same skillet, reduce heat to medium and add butter and minced garlic. Sauté until garlic is fragrant, about 1 to 2 minutes.

4. Add lemon juice to the skillet and stir to blend into the garlic butter sauce.

5. Cook linguine pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water and then drain.

6. Return cooked chicken to the skillet. Add drained pasta and toss with parmesan cheese and a splash of pasta water until evenly coated.

7. Serve warm, topped with fresh parsley and more parmesan if desired.

Notes

Use boneless skinless chicken thighs for extra juiciness.

Add red pepper flakes for a bit of heat if desired.

Stir in baby spinach or peas for added greens and color.
