Ingredients

1 cup orzo pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon lemon zest

2 garlic cloves, minced

1/2 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a pot of salted water to a boil and cook the orzo until al dente. Drain and set aside, reserving a little pasta water.

2. In a bowl, toss shrimp with olive oil, lemon zest, lemon juice, garlic, salt, and pepper. Let sit for 10-15 minutes if you have time.

3. Preheat oven to 425°F. Spread shrimp on a baking sheet and roast for 7-9 minutes until pink and slightly golden.

4. In a bowl, combine cooked orzo, roasted shrimp, and pan juices. Stir in feta and parsley. Add reserved pasta water if needed.

5. Serve warm or chilled and enjoy!

Notes

This recipe is equally delicious hot or cold.

Let the shrimp marinate longer for more flavor.
