Description

This One-Pot Creamy Mushroom Garlic Chicken Alfredo recipe is a rich, savory pasta dish loaded with tender chicken, earthy mushrooms, and a velvety garlic Alfredo sauce. Ingredients

2 chicken breasts

2 tablespoons olive oil

4 garlic cloves, minced

2 cups sliced mushrooms

2 cups chicken broth

1 ½ cups heavy cream

8 oz fettuccine pasta

1 cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley


Instructions

1. Season the chicken breasts with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the chicken until golden and cooked through. Remove and set aside.

2. In the same pot, add mushrooms and cook until golden. Add garlic and sauté for 1 minute until fragrant.

3. Pour in chicken broth and heavy cream, stir, and bring to a simmer. Add fettuccine and cook uncovered, stirring occasionally.

4. When pasta is al dente and sauce has thickened, stir in Parmesan cheese. Return chicken to pot and mix gently.

5. Garnish with chopped parsley before serving. Serve hot.

Notes

This dish is best served immediately while creamy and hot.

For extra richness, add a pat of butter at the end before serving.

You can slice the chicken before returning it to the pot for easier serving.
