Ingredients

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

3/4 cup granulated sugar

1/4 cup all-purpose flour

1/4 cup lemon juice (freshly squeezed)

1 tablespoon lemon zest

1 cup blueberries (fresh or frozen)

Powdered sugar for dusting


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a bowl, combine 1 cup flour, 1/4 cup sugar, and melted butter until crumbly.

3. Press mixture into the bottom of the pan to form the crust. Bake for 18-20 minutes until lightly golden.

4. In a separate bowl, whisk eggs, 3/4 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.

5. Gently fold in blueberries.

6. Pour lemon mixture over the hot crust and return to oven.

7. Bake for 22-25 minutes, or until the center is just set.

8. Cool completely, then chill in the refrigerator for 2 hours.

9. Lift out, slice into squares, and dust with powdered sugar before serving.

Notes

Chill the bars thoroughly for clean slicing.

Use fresh blueberries for best texture and appearance.

Do not overbake; the center should have a slight jiggle.
