Ingredients
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
2 tablespoons lemon zest
2 tablespoons fresh lemon juice
1 cup all-purpose flour
1/4 teaspoon salt
3/4 cup powdered sugar (for glaze)
1 1/2 tablespoons lemon juice (for glaze)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving some overhang.
2. In a large bowl, melt the butter and whisk in the sugar until smooth.
3. Add the eggs one at a time, whisking well after each addition.
4. Stir in the lemon zest and lemon juice.
5. Fold in the flour and salt until just combined—do not overmix.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake for 22 to 26 minutes, until edges are golden and a toothpick inserted comes out with a few moist crumbs.
8. Let cool for 15 minutes in the pan, then lift out to cool completely.
9. In a small bowl, mix powdered sugar with lemon juice until smooth and pourable.
10. Drizzle glaze over cooled blondies and let it set before slicing.
