Packed with seasoned ground beef, creamy beans, melty cheddar, and warm tortillas, this dish is everything you love about tacos, baked into one satisfying casserole. It’s perfect for busy weeknights, potlucks, or when you’re just stuck wondering what to make for dinner.


Ingredients

1 lb ground beef

1 packet taco seasoning

1/2 cup water

1 can black beans, drained and rinsed

1 can refried beans

1/2 cup salsa

1 cup sour cream (plus more for topping)

2 cups shredded cheddar cheese

6 small flour tortillas

1/2 cup diced tomatoes (for garnish)

Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain the fat.
  3. Add taco seasoning and water to the beef. Simmer for 3–5 minutes until thickened. Stir in black beans and set aside.
  4. In a bowl, mix the refried beans, salsa, and sour cream to create the creamy layer.
  5. Begin layering in the dish: tortilla, bean mix, beef mixture, cheese. Repeat until all ingredients are used, finishing with cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until cheese is bubbly.
  7. Let cool for 5 minutes. Top with tomatoes, extra sour cream, and cilantro.
  8. Slice and serve warm.
