Description

Ingredients

1 lb ground lamb

2 cloves garlic, minced

1 tsp dried oregano

1 tsp ground cumin

1/8 tsp ground cinnamon

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

2 cups cooked rice or quinoa

1 cup chopped cucumber

1 cup diced tomatoes

1/2 cup pickled red onions

1/2 cup crumbled feta cheese

1 cup Greek yogurt

2 tbsp lemon juice

1 tbsp chopped fresh dill or mint


Instructions

1. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, dill or mint, and a pinch of salt. Chill the sauce while preparing other ingredients.

2. Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.

3. Add ground lamb, breaking it apart as it cooks. Season with oregano, cumin, cinnamon, salt, and pepper. Cook until browned, about 8 minutes.

4. Divide rice or quinoa among four bowls.

5. Top each bowl with cooked lamb, cucumber, tomatoes, pickled onions, and feta.

6. Drizzle with the prepared creamy sauce. Garnish with extra herbs if desired.
