Description

These Korean Chicken Bao Buns are filled with juicy gochujang-glazed chicken, served in fluffy bao with crisp toppings. This easy and flavorful Korean bao bun recipe is perfect for weeknight dinners or party appetizers. A sweet and spicy Asian-inspired handheld meal you’ll crave.


Ingredients

1 lb chicken thighs (boneless, skinless)

3 tbsp gochujang

2 tbsp soy sauce

2 tbsp honey

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp rice vinegar

1 tsp sesame oil

2 green onions, sliced

1 small cucumber, thinly sliced

8 store-bought bao buns

Optional: pickled red onions or shredded carrots


Instructions

1. In a bowl, whisk together gochujang, soy sauce, honey, garlic, ginger, rice vinegar, and sesame oil.

2. Add sliced chicken thighs and toss to coat well. Let marinate for at least 30 minutes or overnight.

3. Heat a skillet over medium heat and cook the marinated chicken until browned and cooked through, with the sauce sticky and caramelized.

4. While chicken cooks, steam or microwave bao buns according to package directions.

5. Open each warm bao bun, layer in chicken, cucumber slices, and optional toppings.

6. Garnish with sliced green onions and extra sauce, then serve immediately.

Notes

Make the chicken a day ahead for easier assembly.

Store leftover bao buns in the freezer and reheat before using.

Adjust the spice level by adding more or less gochujang.
