Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tsp grated ginger
2 tbsp soy sauce
2 tbsp brown sugar
1 tbsp gochujang
1 tbsp rice vinegar
1 tsp sesame oil
2 green onions, chopped
8 small tortillas
2 cups coleslaw mix
1/4 cup mayonnaise
1 tbsp sriracha
Instructions
1. In a bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, and green onions. Mix gently until just combined, then form into 1-inch meatballs.
2. Bake at 400°F for 15 minutes or pan-fry over medium heat until browned and cooked through.
3. In a saucepan, whisk together gochujang, soy sauce, brown sugar, rice vinegar, and sesame oil. Heat until thickened. Toss cooked meatballs in glaze.
4. Stir together mayonnaise and sriracha in a bowl. Adjust heat level to taste.
5. Warm tortillas. Add slaw, glazed meatballs, sriracha mayo, and extra green onions. Serve hot.
Notes
Use ground turkey or chicken if preferred.
Refrigerate meatballs and glaze separately if making ahead.
