Ingredients
1 cup peanut butter
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Instructions
1. Cream the peanut butter, butter, granulated sugar, and brown sugar together until light and fluffy.
2. Beat in the egg and vanilla extract until well combined.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture.
4. Scoop dough into balls, roll, and place on a parchment-lined baking sheet. Press with a fork to make crisscross pattern.
5. Bake at 350°F (175°C) for 10-12 minutes until edges are golden. Cool slightly on sheet, then transfer to wire rack.
Notes
This dough does not require chilling before baking.
Avoid using natural peanut butter for best consistency.
Cookies freeze well up to 3 months in a sealed container.
