Ingredients
2 pounds bone-in chicken pieces
1 red bell pepper, sliced
1 green bell pepper, sliced
1 scotch bonnet pepper, chopped (optional for heat)
1 large onion, chopped
4 cloves garlic, minced
4 sprigs fresh thyme
2 tomatoes, diced
1 teaspoon allspice (pimento)
1 tablespoon brown sugar
2 tablespoons soy sauce
2 tablespoons ketchup
1 cup chicken broth or water
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons vegetable oil
Instructions
1. Clean and season chicken with salt, pepper, allspice, garlic, onion, and thyme. Marinate for at least 1 hour or overnight.
2. Heat oil in a skillet or Dutch oven and brown chicken on all sides. Remove and set aside.
3. In the same pot, sauté onion, bell peppers, scotch bonnet, tomatoes, and remaining garlic until soft and fragrant.
4. Stir in ketchup, soy sauce, and a pinch of allspice. Return chicken to the pot and pour in the broth.
5. Cover and simmer on low for 40–50 minutes until the chicken is tender and sauce thickens to a rich gravy.

For deeper flavor, always marinate the chicken overnight.
