Description

This easy and zesty Italian pasta salad dressing recipe is perfect for summer pasta salads, roasted vegetables, and more. With olive oil, red wine vinegar, and herbs, it’s the best homemade Italian dressing to elevate any dish. Great for picnics, cookouts, and meal prep!


Ingredients

0.5 cup olive oil 0.25 cup red wine vinegar 1 clove garlic minced 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon Dijon mustard to taste salt to taste freshly cracked black pepper


Instructions

1. In a small bowl or jar, combine olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, and Dijon mustard. Whisk the ingredients together vigorously, or seal the jar and shake until emulsified. Taste and season with salt and freshly cracked black pepper as desired. Chill in the refrigerator for about 30 minutes before serving to let flavors meld.

Notes

Make sure to use high-quality olive oil for the best flavor. If you prefer a milder dressing, use white wine vinegar instead of red wine vinegar. Shake or whisk again before each use, as oil and vinegar may separate.
