Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup chicken broth
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Slice chicken breasts in half or pound to an even thickness. Season with salt and pepper and dredge in flour.
2. In a skillet, heat olive oil and 1 tablespoon butter over medium heat. Sear chicken for about 4 minutes per side until golden and cooked through. Remove and set aside.
3. In the same skillet, add remaining butter and sautée garlic until fragrant.
4. Stir in lemon juice and chicken broth, scraping the bottom of the pan.
5. Return chicken to the pan and simmer for 5 minutes, spooning sauce over top.
6. Garnish with chopped parsley and serve hot.
Notes
Use fresh lemon juice for best flavor.
Pounding the chicken helps it cook evenly.
