Ingredients
1 medium yellow onion
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 cup all-purpose flour
1/4 cup cornmeal
1 cup water
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon fresh thyme (optional)
Instructions
1. Slice the onion and bell peppers thinly.
2. In a skillet, sauté them with a splash of olive oil until softened and lightly caramelized.
3. In a large bowl, whisk flour, cornmeal, salt, and pepper.
4. Slowly stir in water and olive oil until smooth.
5. Fold the sautéed vegetables into the batter. Let it rest for 10–15 minutes.
6. Preheat the oven to 400°F (200°C) and grease a baking pan with olive oil.
7. Pour the batter into the pan, spreading evenly.
8. Bake for 30–35 minutes until golden and edges are crisp.
9. Cool slightly before slicing and serving.
