Description

Italian Antipasto Skewers with Marinated Tortellini and Mozzarella are the perfect no-cook party appetizer. Packed with bold Italian flavors, this easy-to-make recipe includes cheese tortellini, mozzarella balls, salami, olives, and fresh basil for a festive and crowd-pleasing platter. Ideal for gatherings, holiday spreads, or summer picnics.


Ingredients

1 cup cheese tortellini, cooked and cooled

1/2 cup Italian dressing (for marinade)

20 mozzarella balls (bocconcini)

20 slices salami

20 cherry tomatoes

20 kalamata olives

1/2 cup pepperoncini slices

20 fresh basil leaves

20 wooden or bamboo skewers


Instructions

1. Cook the tortellini according to package instructions, then rinse with cold water and let cool completely.

2. Toss cooled tortellini with Italian dressing and marinate in the fridge for at least 1 hour.

3. While tortellini marinates, prep all other ingredients: halve cherry tomatoes if needed, fold salami slices, and pat mozzarella dry.

4. Begin assembling each skewer with one tortellini, one salami slice, one mozzarella ball, one cherry tomato, one olive, one pepperoncini slice, and a basil leaf.

5. Arrange completed skewers on a platter. Cover and refrigerate until ready to serve.

6. Optionally drizzle with extra dressing or balsamic glaze before serving.

Notes

Use tricolor tortellini for a festive, colorful presentation.

Substitute pepperoncini with roasted red peppers for a milder taste.

Assemble up to a day in advance, but add basil just before serving to keep it fresh.
