Ingredients
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup whole milk
2 to 3 fresh peaches, sliced
1 tablespoon lemon juice
½ teaspoon cinnamon (optional)
Instructions
1. Slice the fresh peaches and toss with lemon juice. Set aside.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, beating well after each, then stir in vanilla.
5. Alternately add dry ingredients and milk to the butter mixture, starting and ending with dry.
6. Pour the batter into a greased baking pan and top with peach slices.
7. Sprinkle with cinnamon if using.
8. Bake at 350°F (175°C) for 40 to 45 minutes, until golden and a toothpick comes out clean.
9. Let cool slightly before serving.
Notes
Use ripe yellow peaches for best flavor.
Do not overmix the batter to keep the cake tender.
Top with vanilla ice cream for an extra summer treat.
