Ingredients
1 pie crust
5 large eggs
1 cup milk or half-and-half
1 cup shredded cheese
3/4 cup cooked sausage, chopped
1/2 cup roasted red peppers, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F (190°C) and place your pie crust in a 9-inch pie dish. Blind bake for 10 minutes until lightly golden.
2. Cook the sausage in a skillet over medium heat if not already cooked. Drain and chop into bite-sized pieces.
3. In a bowl, whisk together eggs, milk or half-and-half, salt, and pepper until smooth.
4. Spread the sausage and roasted red peppers evenly over the baked crust. Top with shredded cheese.
5. Pour the egg mixture over the filling, making sure it’s evenly distributed.
