Ingredients

1 cup unsalted butter

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 and 1/2 cups all-purpose flour

1 teaspoon baking powder

2 tablespoons butter, softened (for filling)

1/3 cup brown sugar (for filling)

1 tablespoon ground cinnamon (for filling)

2 ounces cream cheese

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 tablespoon milk or cream


Instructions

1. Cream butter and granulated sugar together until light and fluffy.

2. Add the egg and vanilla extract, and beat until combined.

3. Gradually mix in flour and baking powder to form a smooth dough. Chill for 30 minutes.

4. Roll out dough on a floured surface into a rectangle. Spread with softened butter, then sprinkle with brown sugar and cinnamon.

5. Roll the dough into a log and chill for another 30 minutes.

6. Preheat oven to 350°F (175°C). Slice the dough into cookies and place on a lined baking sheet.

7. Bake for 10–12 minutes or until edges are golden.

8. While cookies cool, beat cream cheese with powdered sugar, vanilla, and milk until smooth.

9. Drizzle icing over cooled cookies and let set before serving.

Notes

Always chill the dough twice — once after mixing, once after rolling — to keep the shape.

Roll gently to avoid cracking the dough log.

Use full-fat cream cheese for a rich and smooth glaze.
