Ingredients
4 boneless skinless chicken thighs
1 cup buttermilk
1 cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
2 eggs
1 tablespoon hot sauce
1 cup honey
1 teaspoon red pepper flakes
1 tablespoon apple cider vinegar
2 cups oil for frying
Instructions
1. In a bowl, whisk together buttermilk, hot sauce, and a bit of salt. Add the chicken and marinate for at least 1 hour or overnight.
2. In another bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
3. Remove chicken from marinade and dredge in the flour mixture, pressing firmly for a thick coating.
4. Heat oil in a skillet over medium-high heat. Fry chicken in batches for 6 to 8 minutes per side until golden and cooked through.
5. In a small saucepan, combine honey, vinegar, red pepper flakes, and a dash of hot sauce. Heat until just bubbling, then remove from heat.
6. Drizzle hot honey sauce over chicken before serving or serve on the side.
Notes
Marinate the chicken overnight for maximum flavor.
Use a thermometer to ensure oil stays at 350°F for frying.
For less heat, reduce the red pepper flakes.
