Ingredients
1 cup unsalted butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups chocolate chips
1 1/2 cups mini marshmallows
Instructions
1. Beat the unsalted butter with brown sugar and granulated sugar until smooth and creamy.
2. Add eggs one at a time, then mix in the vanilla extract until fully incorporated.
3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
4. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
5. Fold in chocolate chips and mini marshmallows without overmixing.
6. Chill the dough in the fridge for 30 minutes to help it firm up.
7. Preheat the oven to 350°F and line a baking sheet with parchment paper.
8. Scoop dough onto the sheet and bake for 9 to 11 minutes, until edges are set but centers are soft.
9. Let cookies cool on the sheet for 5 minutes before transferring to a rack.
10. Serve warm or store in an airtight container once cooled.
Notes
These cookies taste best slightly warm.
If you want extra gooey marshmallows, press a few on top before baking.
