Ingredients
1 lb large shrimp peeled and deveined
2 egg whites
1 cup cornstarch
1/2 cup walnuts
1/2 cup sugar
1/2 cup water
1/4 cup honey
1/4 cup mayonnaise
2 tbsp sweetened condensed milk
2 cups oil for frying
Instructions
1. In a saucepan, combine sugar and water over medium heat and bring to a simmer. Add walnuts and cook until coated, then remove and let cool.
2. Beat egg whites in a bowl until frothy, then add shrimp and mix well.
3. Coat each shrimp in cornstarch evenly for a crispy texture.
4. Heat oil to 350°F and fry shrimp in batches until golden brown, about 2 to 3 minutes.
5. In a bowl, mix honey, mayonnaise, and sweetened condensed milk until smooth.
6. Toss fried shrimp in the sauce until well coated.
7. Top with candied walnuts and serve immediately.
Notes
For extra crispiness, double coat the shrimp in cornstarch before frying.
Do not overcrowd the pan when frying to keep the oil temperature stable.
Add a squeeze of lemon juice if you want a slight tang to balance the sweetness.
