Ingredients
1 pound carrots
2 tablespoons olive oil
2 tablespoons honey
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon fresh thyme leaves (optional)
Instructions
1. Wash and peel the carrots. Slice them into evenly sized sticks or rounds.
2. Preheat the oven to 400°F (200°C).
3. In a large bowl, toss the carrots with olive oil, honey, salt, and black pepper until well coated.
4. Spread the carrots on a parchment-lined baking sheet in a single layer.
5. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
