Description

This Honey Pistachio Baklava Cheesecake is a rich and creamy dessert that blends classic cheesecake with crispy phyllo layers, crunchy pistachios, and sweet honey syrup. Ingredients

16 sheets phyllo dough

1 cup unsalted butter melted

1 1/2 cups pistachios finely chopped

24 oz cream cheese softened

3/4 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1/2 cup Greek yogurt or sour cream

3/4 cup honey

1 tbsp lemon juice


Instructions

1. Preheat oven to 325°F and grease a springform pan.

2. Layer phyllo sheets in the pan brushing each with melted butter and letting edges hang over.

3. Sprinkle chopped pistachios evenly over the phyllo base.

4. Beat cream cheese and sugar until smooth and creamy.

5. Add eggs one at a time mixing well after each addition.

6. Mix in vanilla extract and Greek yogurt until silky.

7. Pour filling over pistachio layer and smooth the top.

8. Fold phyllo edges over the cheesecake for a rustic finish.

9. Bake for 50 to 60 minutes until the center is slightly set.

10. Turn off oven and let cheesecake cool gradually inside.

11. Warm honey with lemon juice to create syrup.

12. Pour syrup over cooled cheesecake and top with extra pistachios.

13. Chill for at least 4 hours before slicing and serving.

Notes

Make sure the cream cheese is fully softened to avoid lumps in the filling.
