Ingredients
1 pound carrots
3 tablespoons unsalted butter
2 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
2. Wash and peel the carrots (or scrub well if you prefer to leave the skin on). Trim the tops, leaving a bit of green for presentation.
3. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in honey, salt, and pepper. Remove from heat.
4. Place the carrots on the prepared baking sheet and drizzle with the honey garlic butter mixture. Toss until evenly coated.
5. Roast in the oven for 25 to 30 minutes, turning the carrots halfway through, until they are tender and lightly caramelized.
6. Remove from oven, sprinkle with chopped parsley if desired, and serve warm.
