Description

Homemade White Bean Soup is a cozy, hearty soup recipe made with tender white beans, vegetables, garlic, and herbs in a rich savory broth, making it a simple comfort food dinner for busy weeknights, meal prep, and cold weather meals.


Ingredients

2 tablespoons olive oil

1 medium yellow onion, diced

2 medium carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

2 cans cannellini beans, drained and rinsed

1 can great northern beans, drained and rinsed

6 cups vegetable broth

1 teaspoon Italian seasoning

1/2 teaspoon dried thyme

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper

2 cups baby spinach

1 tablespoon lemon juice

1/4 cup grated Parmesan cheese, optional

2 tablespoons fresh parsley, chopped, optional


Instructions

1. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.

2. Stir in the garlic and cook for 30 seconds, just until fragrant.

3. Add the cannellini beans, great northern beans, vegetable broth, Italian seasoning, dried thyme, bay leaf, salt, and black pepper. Stir well.

4. Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 20 to 25 minutes.

5. Mash some of the beans with the back of a spoon against the side of the pot to create a thicker, creamier texture.

6. Stir in the baby spinach and cook for 2 minutes until wilted.

7. Remove the bay leaf and stir in the lemon juice.

8. Taste and adjust seasoning if needed, then serve warm with Parmesan cheese and fresh parsley on top if desired.

Notes

This soup thickens as it sits, so add a little broth or water before reheating leftovers.

Fresh lemon juice added at the end brightens the flavor and keeps the soup from tasting too heavy.

For a deeper savory finish, serve each bowl with Parmesan cheese and a drizzle of olive oil.
