Description

Homemade Truffle Fries Topped With Parmesan Cheese are crispy, golden, and full of rich savory flavor, made with russet potatoes, truffle oil, Parmesan cheese, and simple seasonings for an easy gourmet side dish everyone will love.


Ingredients

2 large russet potatoes

2 tablespoons olive oil

1 tablespoon truffle oil

1/3 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. Wash and peel the potatoes if desired, then cut them into thin fries of even size.

2. Soak the cut potatoes in cold water for 30 minutes to remove excess starch.

3. Drain the potatoes and dry them very well with paper towels or a clean kitchen towel.

4. Place the potatoes in a bowl and toss with olive oil, garlic powder, salt, and black pepper until evenly coated.

5. Spread the fries in a single layer on a parchment-lined baking sheet.

6. Bake at 425°F for 30 to 40 minutes, turning halfway through, until golden and crisp.

7. Transfer the hot fries to a bowl and drizzle with truffle oil.

8. Add the grated Parmesan cheese and chopped parsley, then toss gently to coat.

9. Serve immediately while hot and crispy.

Notes

For the crispiest fries, dry the potatoes very well after soaking so they roast instead of steam.

Add the truffle oil after baking, not before, so the flavor stays bold and aromatic.

Freshly grated Parmesan melts and clings to the fries better than pre-shredded cheese.
