2 jalapeños or serrano peppers
1 small white onion
1 cup fresh cilantro
2 tablespoons lime juice
1 teaspoon salt
Instructions
1. Preheat your broiler and place tomatillos, garlic, onion, and jalapeños on a baking sheet.
2. Broil for 8 minutes, turning halfway through, until lightly charred and softened.
3. Transfer everything to a blender or food processor.
4. Add cilantro, lime juice, and salt.
5. Blend until smooth or to your desired consistency.
6. Taste and adjust salt or lime juice as needed.
7. Chill in the fridge before serving to let flavors meld.
Notes
Use more or fewer jalapeños depending on how spicy you like it.
If it’s too thick, add a splash of water to loosen it up.
Great as a make-ahead dip—it gets better the next day.
