This Homemade Meatball Stroganoff is a cozy and creamy comfort food classic featuring juicy meatballs, tender egg noodles, and a rich mushroom-sour cream gravy. A family-favorite weeknight dinner with savory flavors, perfect for cold nights or hearty meals.
Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 small onion, finely chopped
2 cloves garlic, minced
1 tsp Worcestershire sauce
2 cups beef broth
1 cup sliced mushrooms
3/4 cup sour cream
2 tbsp flour
2 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped parsley
12 oz egg noodles, cooked
Instructions
1. In a bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, and pepper. Mix and roll into small meatballs.
2. In a skillet, heat butter over medium heat and brown meatballs on all sides. Remove and set aside.
3. In the same skillet, add more butter and sautée mushrooms until tender. Sprinkle flour over mushrooms and stir well.
4. Gradually pour in beef broth, stirring constantly until the sauce thickens slightly.
5. Return meatballs to the skillet, reduce heat, cover, and let simmer for 15 minutes.
6. Turn off heat and stir in sour cream until fully blended.
7. Serve hot over cooked egg noodles and garnish with chopped parsley.
Notes
Use a blend of beef and pork for extra juicy meatballs.
Don’t let the sour cream boil or it may curdle.
Add a splash of broth when reheating to restore the sauce texture.
